breakfast, lunch, dinner. repeat.












there's been a lot of tea, a lot of fruit.  a lot of 'snack' lunches (she'd happily inhale brie, apples, and popcorn for lunch on a daily basis, as would I) and many adventures in gluten-free breakfast baked goods.  quite a bit of kale and a few grilled pizzas.  thrown-together salads consisting of whatever produce and protein we've got in the fridge.  we've definitely got our reliable standbys.  still, I'm always looking for inspiration and ideas from others' kitchens to add to the mix.  I'd love to know what some of your reliable standbys are.....

  1. A firm favourite in our house is baked sweet potato with tuna and sweetcorn. We also love salad, salad and more salad as the season progresses and we have crops to pick from the garden. Have a wonderful weekend.

I love baked sweet potatoes but would never think to top them with either of those things- I just may have to branch out a bit! and oh I can't wait until more of our salads are from the yard- we are still at the point where to make an entire salad from the greens in our garden would pretty much decimate the plant. but soon!

  2. Crustless quiche (or fritatta, as some might call it) - whatever veg and meat you have, eggs, topped with cheese - cooking in the cast iron pan in the oven. We love broccoli or kale, bacon, and cheddar. Burritos and tacos are also fun and you can put anything in them (beans, rice, fish, meat, sweet potatoes, greens, peppers, etc.). Fish cakes (I used canned salmon because it is good and cheap). Pasta or risotto - again with meat and vegetables or a simple sauce - which is sometimes just butter, garlic, parsley and parm. This is a hard time of year because there is not much farmers market fresh produce to inspire.

    1. oh yes, we do like fritattas! tacos are something I want to do more but for some reason never think to make them- I think I'd do well with a chalkboard in the kitchen where I just jot down meal ideas and then go from there. I could write TACOS! really big and then maybe I wouldn't forget about them.

      and I LOVE the garlic/butter/parsley/parmesan noodle combo- I think of it as 'grown-up' buttered noodles ;)

  3. I seriously need to come eat at your house! Yummy.

    We eat a lot of kasha for breakfast or eggs. I'm really getting into the spring roll thing. I make pizza every Saturday night. We do a lost of veggie stir fry too. Our staple used to be pasta dishes we are leaning away from that and more towards rice and other grains.

  4. Beans, beans, beans! We eat a lot of beans (with quinoa or rice). I cook up a pot at least twice a week. I vary the type usually between black, white navy, garbanzo and sometimes split peas. Mexican style is of course very easy and a crowd pleaser. I also like to do beans and greens (especially with the white beans). Almost every meal I make comes with greens - usually kale sauteed with onion, heavy on the garlic, sometimes fresh ginger too. We only cook meat about 2-3 times a week - usually chicken, although last night I surprised us all with pork chops (which I'd never made before). I've also been making turkey burgers almost weekly. I roast a lot of my vegs in the oven (or on the grill depending on season) - beets, brussels sprouts, and my fav lately is roasted cabbage. I'm not one for meal planning, but usually around 3pm I start chopping some sort of veg which becomes what my meal centers around. Yesterday I cooked 3 sweet potatoes, and we ate them with pork chops & roasted red cabbage (both cooked on the grill). We're still working our way through our butternut crop and my fav way to eat that is skin on, sliced 1/4-1/2 inch thick, add evoo and salt and either roast on pan in oven, or on a pan on the grill. Tonight I think I'll use the leftover sweet potatoes and make a split pea dahl-type dish with greens. -- Everyday I eat egg(s) on toast for breakfast. Everyday. I struggle most with lunch. I feel like I get stuck in a rut of sandwiches, noodles or salads. I need to boost my lunch game.

    1. mmmmmm beans. I do love a bowl of beans and rice topped with salsa (and some of your thai peppers!) and a fried egg. I could eat that every day. I need to play around with dhal-type dishes and find a good 'recipe' I like.

      you're giving me a lot of good ideas, Lisa- turkey burgers (yum!), roasted cabbage (yum!) and I love pork chops- so good. we make them with pears and lots of black pepper and they come out so yummy.

  5. We eat a lot of eggs... Omelets with whatever veggie we have on hand is a favorite, roasted root veggies are always not far behind. Pancakes for breakfast : I've said it before, you can put anything in pancakes. We make a lot of one-pot meals like stir frys and risottos. Pizzas is also on the list. I'm still trying to find a gluten-free pizza crust I like. If you have a recipe to share, PLEASE do!!!

    1. I like the idea of loaded pancakes filled with nuts and maybe some veggies..... typically we do a pumpkin pancake with lots of eggs and little grains, but I'd like to play around with a few other pancake 'recipes'.

      I haven't made my own gluten free crust yet- just tried a couple I've found in the freezer at the grocery store. nothing spectacular as of yet, but I'm also not terribly picky about my crust, as long as it is a bit crunchy and on the thin side, I'm happy.

  6. yum... what your eating looks fabulous :) we have been hitting a rut. ack! part of the problem is too many busy happenings around mealtime. it's been cutting into the time available (and the inspiration)... but ashley english's soup recipes in the last taproot... AMAZING. you should try them (if you haven't already).
